Mike Kotlarek’s winning recipe for Biker Chili
Ingredients
9 lbs. ground beef or meatloaf mix
6 TBS olive oil
3 TBS salt
6 TBS garlic powder
4 TBS chili powder
3 to 4 TBS cilantro leaves
3 to 4 TBS ground cumin
3 to 4 TBS ground coriander seed
3 to 4 TBS ground white pepper
3 sweet onions
1 red onion
1 1/2 red bell pepper (chopped)
1 1/2 orange bell pepper (chopped)
8 Jalapeno peppers (chopped)
2 Poblano peppers (chopped)
2 Italian long hot peppers (chopped)
8 Serrano peppers (chopped)
6 cans diced tomatoes (28 oz. cans)
6 cans black beans (15 oz. cans)
3 cans tomato sauce (8 oz. cans)
3 cans tomato paste (6 oz. cans)
1 pkg. frozen corn (10-12 oz.)
1 six-pack dark beer

Instructions (follow exactly)

Drink one beer while gathering ingredients

Drink second beer while chopping vegetables

Brown meat, drink third beer.

Sauté onions and peppers in olive oil until caramelized, adding garlic halfway through. Stir in remaining spices. Drink fourth beer.

While drinking fifth beer, combine all ingredients in a crock pot. Add sixth beer to chili mixture. Plug in the pot and cook for hours and hours.
